1 cup butter, softened
3 ¼ cups peanut butter
2 ½ cup brown sugar (or less)
2 cups white sugar (or less)
6 eggs
1 ½ tsp vanilla
1 ½ tbsp corn syrup
9 cups rolled oats!
Chocolate chips
- Preheat oven to 350F.
- With blender, cream butter, peanut butter and sugars until smooth. Add eggs, vanilla and corn syrup and blend.
- Stir in oats and chocolate chips (I usually have to do this in two separate bowls to fit it all).
- Chill dough if needed to make rolling easier. Roll tbsp into balls and place on cookie sheet lined with parchment (not absolutely necessary), 1 inch apart. Press with fork (I wet the fork to reduce sticking).
- Bake 2 dozen (2 sheets) at 350F for 10-15 minutes, turning halfway through.
- Makes around 8 dozen.
