Peanut Butter Oatmeal Cookies (flourless)

1 cup butter, softened
3 ¼ cups peanut butter
2 ½ cup brown sugar (or less)
2 cups white sugar (or less)
6 eggs
1 ½ tsp vanilla
1 ½ tbsp corn syrup
9 cups rolled oats!
Chocolate chips

  1. Preheat oven to 350F.
  2. With blender, cream butter, peanut butter and sugars until smooth. Add eggs, vanilla and corn syrup and blend.
  3. Stir in oats and chocolate chips (I usually have to do this in two separate bowls to fit it all).
  4. Chill dough if needed to make rolling easier. Roll tbsp into balls and place on cookie sheet lined with parchment (not absolutely necessary), 1 inch apart. Press with fork (I wet the fork to reduce sticking).
  5. Bake 2 dozen (2 sheets) at 350F for 10-15 minutes, turning halfway through.
  6. Makes around 8 dozen.
